Beer and Cheese - July Edition



Kristin and I were the lucky ones to partake in the monthly Beer and Cheese club at Goose the Market. The pairing was the Harbison cheese by Jasper Hill Cellars with Boulevards' Sixth Glass Quad...a delightful match.

Jasper Hill is a family owned dairy farm in Greensborough, Vermont. They have seven cellaring caves that lie beneath the pastures where their Ayrshires roam.  The Harbison was creamy and mellow with a lucious mouth feel and a melty center.  It came wrapped in a spruce cambium which lent some woody notes. The Quad paired very nicely, the over-ripe fruit and faint sweetness complemented the cheese.
